I've struggled with that with skiing photography, too. And my general rule is that unless I'm trying to bring out detail in the snow, I blow it out and make the rest of the shot pop. In the shot above everything looks good. I would lean towards blowing out the white. You could also use a filter to maybe cut down on some of the extra white.

I've used a polarizing filter before. It cuts down on some of the light getting in and allows the other colors to pop more while preserving some of the white detail. I've also used a lens hood, and messed around with my white balance settings some, too.
