I'm sure there is a fuller step by step guide already on here somehow, but the way I have done it is as follows:-

1) load your colour image in Photoshop
2) duplicate the layer
3) convert the duplicate layer to b&w by your chosen method
4) erase the parts of the picture that you want in colour (zooming right in usually required).
5) flatten image

using a mask on the second layer alows you to paint away the areas that you want to be colored.
if you make a mistake you can easily paint it back again.
use the brush tool on the mask...if the mask is white colored: use black brush to paint away areas...and use white brush to fix the mask again
goodluck, and happy photoshopping!!

Max, please try to keep the ass-hatt-ism to a minimum. You know that was no help at all.

Here is a video I found. The key here is to search for "selective color."

Are you trying to make it more of a chocolate BW? Or are you wanting to do selective color?

Selective color you can use masking after you convert. Here is an example:

I had converted using the gradient map conversion method. Then I added a mask and brushed in the portion I wanted to have back as color.

Another method you can use is convert to bw - then use your history brush.

Now if you are just wanting to make your picture more of a chocolate BW... that is even easier. Convert your picture to your BW. Once you are done do a color balance layer and adjust it how you like. For me... I like to change the midtone 4,0,-4 or play with it until it looks like I like. Here is an example:

It is ever so slightly chocolate. Not a true BW as above with the selective coloring.

I hope that helps some. If you have any questions just holler!
