Default Photoshop Basic Guide - Adjustments and others

Is there a Photoshop basic guide (apart from the Photoshop Manual) to what all the adjustments actually achieve in laymans terms, or is there a certain expectation that you would know what hue / saturation is and what curves are / do?

I see a multitude of you tube videos where the tutor seems to know exactly what levels to adjust to e.g. adjust to 50 on the hue scale etc. and wonder if they have either practised before creating the tutorial after having just ramdomly carried out adjustments or understand what each adjustment will do

I tend to just aimlessly slide the sliders or pick an adjustment to play with, without really having an understanding of what the end result will be.

I guess this is part 1 of adjusting photos if anyone has similar basic guides to layer types too that they can share?

Adobe Photoshop CS5 Classroom in a Book

This is a very good book. It is a step by step guide to PS. It includes a cd that has your starting and ending images and walks you through how to get from start to finish. It explains the tools and how to use them. Well worth the $ and time.
