Theres two main ways to colour correct skin tones some people use % or CMYK on sample points others use ratios of RGB it depends which colour space you use more.

The general rule is for a sample point on a well lit portion of skin R is greater than B which is greater then G. The difference between R and G is greater than the difference between G and B.

You may want to mask the skin area as it may cause colour shifts in your picture that you dont want.

If you gave us an example of a shot you are having a problem with we might be able to give you more specific pointers.
