To start with the easiest, I know that Shadowhouse Creations has a lot of fabulous free textures.

For the vintage look, there are a myriad of different ways to simulate different types of 'vintage'. CoffeeShop has a couple of different actions you can try to start. Poke around, see what you find. And then build off that to make something unique to you.

The first 2 styles are achievable simply using Layer Blending Modes and a few other tweaks in Photoshop or even GIMP. There are thousands of tutorials online for this kind of thing, Google away.

You can make your own textures easily - scrunch up paper, or run a hairdryer over fax paper, and scan it in, or take photos of textured walls and planks of wood, that kind of thing.

As for the black and white, in my opinion the examples here are not good. The first one in particular is almost universally grey and flat. There's very little actual black and white anywhere that matters. It looks like the photographer has simply set monochrome and high softening in-camera; no real secret there.
