Read up on Adjustment Layers and Masking that's pretty much all you will need for the majority of your work. I would also read up on each of the tools in the toolbar but for the most part the selection tools and the healing and clone brush will be your most used ones.

Photoshop overwhelmed me at first, too. Take it bit by bit, check out tutorials on the subjects Murtasma listed by googling and using youtube. Pick up a book by Scott Kelby, such as The Adobe Photoshop CS5 Book for Digital Photographers. He can lead you through things step by step.
