The first major juestion is the type of Baptism (immersion or sprinkling). Age of grandson (infant or youth). Location (what type of lighting is avaliable). What are churches rules regarding photography? Lots of questions but my guess the 17-55 is likely to be the choice or possibly the long zoom on a tripod,

Get there early. Introduce yourself to the vicar and get him/her on your side - very important. Try some shots around the fount or where the baptism is to take place to get your exposure right. Try not to use flash as this will kill the natural light which is always best. Good luck

I'm not a professional, but the obvious tip is to use your lens that has the widest aperture.

I'm not sure what your 18-55 (kit lens?) opens up to but I want to say it's somewhere in the 4.5 area and I believe the 70-300 will get down to 4.5 when at 70mm. If you have the IS version that will help some too.
You may have to crank up your ISO a bit to get the shutter speed up depending on the natural light in the church given you can't use flash. I wouldn't go below 1/60th of a sec on shutter speed or things start to get pretty shaky without a tripod. If you use your 70-300, keep it at 70mm to allow as much light as possible to get in the lens.
Good luck and post some pics back here! We'd love to see how you came out.
