This was a quick candid shot of my son on his daddy's shoulders. My camera was set on auto, and there's been no processing, this is straight from the camera. I'm a complete novice at photography, but I want to learn. My camera is basically a point and shoot camera, I have a little control over some of the settings. What could I have done to have made this a better shot? or what could I do to it in photoshop?

I would've left a bit more room on the right side so your son isn't almost cut out of the shot, but not too much because you don't want him in the center. I understand that this is a quick snapshot, but otherwise you might've tried moving so there isn't a shadow on his face (or having his dad move). I wish you success on your photography "journey".
