A few thoughts:
1/160 is a really fast shutter speed for portraits. I generally use 1/60. That also allows for a smaller aperture than the f/4.5 that you used, which would provided better depth of field (DOF) in your picture. Something in the f/5.6-f/8 range would be better. I can't tell from your picture, but try shooting in RAW instead of JPEG. Then you have more information with which to push the vividness or saturation of the image. That makes the colors pop. If you want to separate your subject from the background, you need studio strobes -- one or two on the face of your subject and a hair light above and slightly behind your subject, giving that sun-lit glow.
