I have to shoot a horse show where they jump over bars for a friend. The field is a polo field so can't get close. Got a 70-200 lens and nikon D90 camera. It's in California so will be very sunny. How would you shoot it. And at what

You'll want a fast shutter speed to freeze action: 1/200 or faster (preferably faster). Using f/2.8 will help you isolate the subject and at those ranges gives you enough DoF for most of the horse. The trick is gonna be to shoot in the high-speed continuous perhaps with continuous AF as well, depending on your location to the jump.
Generally speaking youre better off with a front 3/4 view of the jump, though dead-on and side-on can be interesting if properly utilized.
