I see on, say, the Assignments section of the site, it stresses that you should make sure your EXIF data is in tact and I've seen other posts apologising for losing the EXIF data. I know what EXIF data and how to find it when viewing a photo is, say, Photoshop but how do I ensure I don't lose it - I know I have lot of photos stored where it's not there I'm not sure what I did to lose it.

Most editing software don't keep the EXIF information. After all, what use is exposure information after you have brightened or darkened the photo?
Having said that, you could either just post the EXIF of the original photo, or copy the exif from the original to the edit. I use "exiftool" to do the latter, such that I can post a resized photo with a border on Flickr which still contains the EXIF of the original.

What program are you using to edit your images? If you're using PhotoShop for example, the EXIF data should remain intact unless you use "Save for Web" to export the image as a JPG. In LightRoom there's an option to "Minimize Embedded Metadata". If that's checked then it will strip most of the EXIF and other meta data, if left unchecked everything is preserved.

Know what your post s/w does, or doesn't. Major professional s/w usually keeps it, frequently with modifications or deletions. Shareware/Freeware code may or may not, WAG. I don't include it in code that I write cuz I don't have time to keep up with any 1 mfr, much less everyone. There are freebie utilities out there to restore basic stuff with info you provide, JFGI
