You can use the cokin system with a variety of filters. Lee and B+W both make great filters that will fit into the Cokin system. I would avoid the actual cokin filters though. The CP and ND filters create wicked color casts that are a nightmare to deal with, especially if you're stacking a couple.

I use the Cokin system (filters and all) and really like it. Sometimes the colour cast is pretty noticeable. Other times, not so much, and I stack filters pretty often. Generally a Grad ND and a regular ND. I think that they're a great starting point, especially if you're just getting into the square filters. I personally would be a bit put off if the only option was to start with filters that are in excess of $100. But maybe that's just me.
Anyway, here are some of my shots with the filters Flickr: Search -Nicole-'s photostream. There are a few where the colour cast is pretty obvious, but it's pretty much just 2 of them. The rest are the natural colours. The one thing I will say is that I have had to replace the filter holder once. I started with a wide angle filter holder, and the bits on the back that keep it attached to the ring bent. I probably threw it in my bag wrong. But they're plastic. So they're not super super durable. But at the price, it's not too bad if you need to replace one.
