The basic idea is you take a series of shots in progression / burst type mode. For the post processing you would layer the shots on top of each other creating one final photo.

Yup, it's a post-processing thing. You do want to be careful not to move the camera between shots if you can, and most folks recommend using a tripod. The technique is identical to the one used for creating clones/multiplicity. Here's a a tutorial on creating clones with the open source package, the Gimp.
Basically, you need a software package that can do layers and masks to do the compositing.

You need to think about lighting as well. Here I imagine that there is a spotlight following the rider. For the situation you are talking about, you probably want the sun behind you. One thing you won't be able to do with burst mode is use flash - it won't recharge in time between shots.

I recently saw an image like this that was done in the form of a panorama. The athlete, a high jumper in this case, made a series of jumps. The photographer took a series of shots at different stages in the jump, moving the camera a bit to the left with each shot. The final image was processed as a pano with just a bit of erasing and masking to make sure the athlete was visible in each shot. The resulting image was quite good.
I am not suggesting this would be a better method that what has been described above, only another approach to achieve the same thing.

Thank you everyone for your quick responses (and not commenting on my grammar)...lol I have tried the continues bust on my camera with some success...so we have step one. I have not tried post production layering, but this has inspired me to do so. I will also give the last suggestion a try as sometimes in the woods I can't always find a stable place for the tripod. If I can get the shot I will post it so we can see how how it all turns out..
