most people have trouble composing an image, let along worrying about pixel quality thereafter.
Actually the 35mm will probably have less DOF for any given composition because you'll have to get closer (the apertures are close enough to be negligible)...But I'm not addressing the quality of bokeh, I don't know those two lenses personally, and I almost never care about "the quality of the bokeh".

Personally for what you're doing I would choose a fixed f/2.8 zoom around 17-55mm.
Of the two primes you mention I'd probably choose the 35mm but IMO it's not wide enough on a crop body for most "street/ landscape" type work I would want to do.

Yes. It is still an 18-55 lens and although it will not work properly on a full frame or film camera, you would see a much wider FOV if you put that lens on one of them.

Why do you think, as an example, the FX lens is 24-70 & the equivalent DX lens is 17-55? Because you will get a similar FOV....
