The SPEED of the card has nothing to do with shutter speed and everything to do with TRANSFER speed (to and from the card). Higher speed cards are useful for things like video (in your 7D), high-speed continuous shooting (sports, with the 7D's 8fps) or simply taking a LOT of photos in a short period of time.
Most of these cards are also designed to be more rugged or tougher with respect to physical damage and the elements of the outdoors. They also come with significantly better warranties and services attached, so that's a huge help when/if you need it
