I'm dabbling in HDR photography and my T2i will only let me do 3 exposures at a time. Is there any way to adjust the AEB to do up to, say, 9 exposures 1/3 stop apart? If it's not possible w/ the stock T2i software is there any aftermarket software or addons that will allow me to do so?

Not as far as I'm aware. In the Canon lineup, only the 1-series cameras can do more than a 3-image bracket. On the Nikon side of the fence, I believe the D200/D300/D300s tier is the one where the bigger bunches of images for AEB starts.
Obviously, you can bracket as many shots as you want, if you adjust the exposure settings manually, but doing that handheld and still getting the images to line up is going to be hard. One trick some people do is to use the AEB with exposure compensation, so you can cover nine intervals with three AEB bursts. (I.e., you'd set your EC interval to .5 EV, and then set exposure compensation to -1EV, and grab the -1.3EV, -1EV, and -.6 EV shots, then set EC to 0, and grab the -.3, 0, +.3, then set the EC to +1EV, and grab the .6, 1, and 1.3EV shots.)
