Default Lens, EF vs EFs, focal lengths

I have pretty much decided that the lens that I really want is the 24-70 2.8. I am saving up.
I am sort of concerned though that 24mm might not be wide enough on a crop body and wondering if there is a way to test it other than by renting the lens.
If I were to put my 18-55 EFs lens and find the 24mm spot would it show the same view/width as 24mm on an EF lens? Likewise if I were to put on my 55-250mm lens, find the 70mm spot, would that be the same?
I hope this question make sense.

Yes on the same camera they would both be the same.
You could always get a Canon EFS 10-22 if you find the 24-70 is not wide enough for you.

The only possible issue with a 10-22 and 24-something zoom combination is if it turns out that 22-24mm is NOT a natural "breakover" point for you.

If that's the case, then the EF 17-40 f/4L USM might be a better choice, if you can put up with the f/4 max. aperture and lack of IS. Otherwise, the EF-S 17-55 f/2.8 IS USM, Tamron 17-50 f/2.8, or the EF-S 15-85 IS USM might be worth considering.

A natural point to stop and switch lenses. If you tend to zoom back and forth in the 18mm-30mm range a lot, having to stop and switch lenses whenever you hit 20mm/24mm could drive you nuts.

Hmm, I hadn't thought about that. What I am looking for in a lens is definitely the wider aperture. I love the 50mm because I can use it indoors without flash. But at times, I just can't get far enough away from my subject to get everything in the frame. This is why I was thinking that the 24-70 might be a good choice. My kit lenses are pretty much worthless indoors without flash. They are fine for outside, but overall, they do not perform the way that I want them to.
I am going to have to read up on the others that you suggested.

One of the things you might want to do is do a shoot outside, like you envision doing with the 24-70L, and use the 18-55 kit lens you have. Then, analyze the focal lengths you used with an EXIF analysis tool, like ExposurePlot or PhotoStats, to see where you like to "sit", focal-length wise. This might also help you with decisions on prime lenses you might like.

The "normal on a crop" fast prime candidates are typically the EF 35mm f/2, the EF 28mm f/1.8 USM, and the Sigma 30mm f/1.4. I went weird and got a Contax/Yashica mount Zeiss Distagon 28mm f/2.8, found it wasn't as fast as I'd like, and now I've settled on an adapted manual focus Leica-R Summicron 35mm f/2. You probably don't want to do this, though. I'm an eccentric.
