Default Nokia 6120 classic and street photography

Hi, DPS members.
I only started to have interest in photography a few months. DPS is such a great resources for me to learn more about photography and improve my skills. Since the only photography equipment I have right now is Nokia 6120 classic, not all the techniques are applicable to my situation.
Composition seems to be the only key word I can recall whenever I take a picture. After taking some pictures I think I can make the most out of my Nokia in street photography, and I like it better when it's in black and white. But that's where my confusion starts, how much bright and contrast is enough? Is there any general rule I can follow when I convert my pictures to B&W? By the way, MS Paint.Net is the only application installed on my laptop, so no fancy tips, please.
