This may sound like a smart-a$$ answer, but do you have the manual that came with the camera. According to the one I downloaded from Nikon, the S510 does not have a manual mode setting, so you wont be able to manually adjust the aperature and/or shutter settings

Don't feel bad. You cannot find the manual mode because your camera does not have it.

I found the following review for you and I cut the relevant part for the rotary selector:

The rotary multi selector:

In terms of shooting modes, those are selected via an onscreen dial.

There is a high-sensitivity mode that increases sensitivity up to ISO 1600 and increase shutter speed.

There are there are 15 "scene modes," those being portrait, landscape, sports, night portrait, party/indoor, beach/snow, sunset, dusk/dawn, night landscape, close-up, museum, fireworks, copy (to take clear pictures of text and print), backlight and panorama assist.

There are no manual modes; the S510 is strictly a point & shooter.

Info extracted from: DigitalCameraRoundup.com - Nikon Coolpix S510

Hope this hepls
