Newbie here! This is not restricted to the D3100, but here is approx one hour time lapse I took last week out by the road in front of my house. The wind direction changed from S to W during the one hour session..

You can always just do the same thing better. If you do it over a longer period, then there will be bigger changes in the sky. If you're battery can last a day, now you have a sunrise and/or sunset. With more frames, you can have less FPS (Taken, not as in the video), each new change between frames is more dramatic.
