'm a super newbie here. New as in, I didn't know what aperture, shutter speed means yesterday. (now i have a better grasp!)

Okay, I know that point and shoot camera's are not good for shallow depth of field picture, but getting a SRL will be way over my head and I'll just ended up being very frustrated with it.

I am trying to take some photo with shallow depth of field but it doesn't seem like it's working. In AV mode, I'm suppose to be able to get the AF to F2.8, but sometimes, it will not let me go further and stop at 4. Why is that?

Also, sometimes I would specify the ISO to 200 instead of letting it to it automatically, but on my display, it will say ISO 800 , I don't want alot of noise, so I'm trying to make the ISO lower, but it won't let me.. I'm so confused.

Camera: Canon G9
Aperture: F2.6 music (it won't let me go down to 2.6)
ISO 100 (I set it to 100, but I think on one or both of these pic, on my display it says ISO800!!??)
I forgot the other numbers, next time I'll write them down sorry

Did i do something wrong? How can i improve?

Don't be so sure about that. I find my dSLR easier to work with than many compacts.

The f-number is a measure of how much light passes through the lens. When you zoom in, you look at a smaller part of the world, hence you get less light. If you zoom all the way out, you'll see that you can reach f/2.8.

Probably you have set it to the green square mode, which is a mode in which the camera does all the thinking for you. It should use the ISO you've set in M, Av, Tv and P modes.
