Will be shooting in moderate size sanctuary. Normal lighting is high up and I will be shooting pictures of pianists. Probably be using 70-300 zoom lens. What settings would be best?

Well, we can't give specific settings without actually being there. Every single setting is going to be different, no matter how similar the light may seem.
Due to the type of scenario, I'm guessing the lighting is going to be pretty crappy from a photographic standpoint. So you're probably going to have to use a wide open aperture, which I don't think is very wide on the 70-300. That means you're going to have to bump up that ISO pretty high. Depending on your camera, this is probably going to lead to a lot of noise. To help things out, shoot at the lowest shutter speed you can without getting motion blur or camera shake "unless the specific shot calls for motion blur to emphasize something". Shoot in Raw! That's probably the most important thing. This is going to give you a little more leeway in bringing up that exposure in post processing. Keep in mind that it's also going to highlight all that noise, but most Raw editors have really decent noise reduction built in. Good luck with your shoot, hopefully things will be easier than that.
