Depending on your panorama software, there may be a way of controlling the bend. What do you use?

I have done this before and handheld, so it should not be an issue. I put it together by doing 3 separate hdr images and then stitching them together in photoshop. If you build 3 panoramics and then try to hdr it, it did not seem to work as well for me.

There are at least three things that tend to cause the bendiness
1. Wide angle lenses, so I usually shoot with telephotos, 150 all the way up to 800 mm and then stirch the panned rows together.
2. More than 50 percent overlap. This causes wiggles and blurring at the interface.
3. Non-level shooting. It is important to have the camera leveled in all directions. I use a Jobu gimbal for all my panoramas.

Lastly, the software you are using can have a significant effect on the quality of the final image. I prefer PanoramaStudio 2 Pro over Adobe Photoshop.
