Default An ounce of prevention is worth a pound of cure.

As suggested in the title, had I taken a bit more time snapping this shot I probably wouldn't be posting here asking for advice.

I took this photo at my parent cabin this past weekend and am mostly happy with it. When I took the shot the bottom of the dock was not parallell with the framing of the shot. "No problem", I thought, "I'll just straighten it in post." And that's what I ended up doing, now I notice that act made the horizon waaay un-level. My question to all of you is; should I have left the horizon straight as shot or was leveling the dock (the subject) the correct thing to do in this case?

I would use the rectangle tool and capture from the horizon line up, press Control-T and rotate until straight. You will no doubt have a sliver of background color on the bottom left and bottom right side but you can remove that with the healing brush. That will give you the best of what you got to work with.
