Like I always do, I recommend shooting RAW because of the flexibility it gives you. I usually sharpen my images at the RAW level, convert to jpg then do any layer masking or other edits. I read that when you sharpen jpgs, that should be your last PP step. I usually do a high pass sharpen at that point after all of my other edits are done.
Most lenses are sharpest around f/8, so shooting at f/11 should give you a good combination of sharpness and DOF for landscapes. Use ISO 100 and let your shutter speeds vary. This isn't for sharpness, but this technique can sometimes give your images some nice "pop." - Levels: Getting the Professional 'Pop'
