I just came back to this thread and suddenly realized what the OP meant by the EV changing when it was set to manual mode - yes, it changes when metering. The EV indicator is reacting to changes in lighting, and while it isn't actually changing settings in the camera, it's more like it's showing you which way you should adjust your settings to get a good exposure. So when you're shooting this way, just ignore the EV indicator.

Bahgheera I was thinking the same exact thing. The EV indicator in manual mode is like a guide telling you if the picture is dark or light. You beat me to the punch though.

Just because this is in the how did i take the shot, how do people take shots like this?
Wouldnt even know where to start.

Its just a regular panorama or an equirectangular panorama that is turned stereoscopic or whatever thru photoshop or hugin.
