Default Smoked Almonds

Almonds are one of my favorite things to smoke in the smoker. These things are so good you can't stop eating them once you start. I start with 3 pounds of raw almonds from Costco. Put 6 cups warm water and 2 cups coarse kosher salt in a bowl and stir for a few minutes then add the almonds. Let soak for 3 hours stirring once in a while.

I use a tray with holes in it so they smoke evenly.

I like a mixture of hickory and maple wood spread throughout the coals.

Fire up a little coal in the chimney. Do not use matchlight or any lighter fluid or your almonds will taste like lighter fluid.

Make sure that your almonds are not layered too thick or they wont dry and roast properly.

Smoke at around 225F for a couple hours. Have to keep a close eye on them because they will burn quickly once they are done.

Who would figure, a visual recipe exchange on a photo site

I have no idea what smoked almonds would taste like, so I'll just have to take your word for it that they're good.

While I admit I was astounded to find this on a photography forum, I also love almonds. I eat them in various forms - raw, smoked, salted, unsalted, whole, crushed, in butter form.... the list goes on!

Sometimes I think I eat too many of them...

Well, you can get them at the store too! I highly recommend them.
This also gives me an idea for a photo series! Dinner from beginning to end. Yum!
