Default Where to Meter

In a shot of snow capped mountains with a green foreground and lots of contrast, Where should i take my light data from if i'm planning on converting to B&W later on? Any input would be helpfull! Thanx!

I found the answer i was looking for just by searching threads with a few key words. DPS Rules!

well for correct exposure I would spot meter off of the green which is close to an average colour, and then check the meter reading for the snow that would be my highlights. I would just be careful not push the highlights to far so the dont blow.
