Lately I have been forcing myself to set my camera back to auto when I put it in my bag. I have twice now had about 50-75 shots ruined by leaving the camera settings at whatever they may have been from my last shoot....just being too quick to get going and not paying attention to the camera.
Set it to auto when i put it in my bag, that way I either get auto set shots or am forced to adjust the settigns before I get going again.

For the first 2 months or so of using digital, I forgot about ISO 90% of the time...
I don't find myself forgetting much, but sometimes I forget to change IS mode on my 100-400 or the AF mode on the camera.

I forget to change my white balance from indoor and out.. whoops.. fortunately when I did that this last weekend it only messed me up for a couple of shots.

Last Friday we were invited to attend an "opera" performed by the neighbor's twins' kindergarten class. Since I had been doing some macros and using manual focus, I grabbed the camera off the tripod and forgot to reset it to auto-focus. I discovered the error half-way through the play. I was very lucky in that the lens must have been accidentally moved to a position that was reasonably sharp. Yesterday I had taken in a grandfather clock for repair and I usually photograph the movement as it is a great help in reasembling all the bits and pieces. I was usng the onboard flash and wondered why the images were looking so blue. I had used the Cloudy WB setting the day before and never reset it. It was easy enough to reshoot the images with the Flash WB setting. Now I have a little routine I go through to make sure I start every camera use session with the same basic setup and go from there. I guess I am still learning my way around this D80. 8-)

I usually forget I can bump up the ISO in low light. My camera always displays the value of a custom ISO, white balance and etc. so forgetting to 'reset' isn't an issue for me. But then again I almost never change my white balance. Auto works perfectly for me 99.99% of the time.
Not really a setting, but sometimes I do forget that in low light my LCD is very bright relative to the surrounding light and as a result the picture will usually be ½ to 1½ stops darker than it appears to be at the moment. ... I also forget to charge my battery. There's nothing quite like photographing a birthday party with 12-15 minutes of battery life remaining!

I often forget to check the ISO as I don't use to do much with it, but when I do set the ISO higher in low light situations I usually forget to set it back, and I forget to check it the next time I use the camera.
Once I managed to take a lot of pictures with an iso of 1600 in full daylight and I didn't notice before I checked out the pictures on the computer and saw all the noise...! |

Actually, I shoot RAW + Large JPG so we are covered there. Just that if time is limited, as it usually is in my life, it's easier to just take them out of the JPG side of things and go.

I forgot my memory card once and had to buy another that day - I keep that one in my car just in case.
I have my biggest problem with not checking ISO. I usually have auto ISO set so that when light drops it will automatically ramp it up to a max of 800 when my shutter speed drops below 1/20th of a second. My problem is that sometimes I will go to manual exposure settings and forget that Nikon does not think ISO should be part of manual. Thus, while I might manual set my shutter and apperature it still uses auto ISO rather than leaving where I have it manually set.
