here's how to do it in photoshop:

Like this:

Select the type tool.

In the options bar, click the color swatch and set the text color to 50% gray. Use RGB values 128-128-128;

Choose a fairly heavy typeface like Arial Black.

Type the copyright symbol or any other text you want to use for a watermark.
Click the commit button to add your text.

Use the move tool to resize and position your text as desired. Double click to commit the changes.

In the layer styles palette choose Bevels from the pull down menu.
Click on Simple Inner to apply this effect.

Double click on the circled f symbol of the type layer in the layer palette to bring up the style settings dialog.

Adjust the bevel size and lighting angle until it's to your liking.
Click OK to apply the settings.

but can photoshop do a folder of images in one go?

but thanks for the info i am still trying to find a suitable way of doing mine that fits in with my work flow

I think we all know that Photoshop can do watermarks. And we all know that GIMP can as well. But is there anything wrong with having another option? For a variety of reasons people may want to use something besides Photoshop to watermark their photos.

As soon as the 504 Gateway Error is gone I'm going to be all over this.
