Anyone know how these shots were taken and what post processing was done to make these images look like this?

I think the key to shots like that are the people, notice how they are all old, scraggly, rough faced motted haired... scranny scranners?

Young people have smooth skin so you don't get the detail.

As for processing, I imagine he banged up the clarity and went nuts with the dodge/burn tools in photoshop

yeah tons of dodge and burn on those for sure, and reaaaalllly old skin

Good lighting, but I'm thinking it was shot in raw and either made several exposures from one raw file or simply tone mapped/compressed the raw file (maybe double tone mapped). Basically generating an HDR image from a single RAW file. It appears to have been over sharpened to bring out the details better and the black slider in light levels increased a lot. Convert to BW with some fiddling of the sliders. Maybe a little dodging/burning along the way to brighten eyes and such. Probably more goes into this than any of us can imagine.

Pretty cool images from all aspects (light, photography, post process, subject, etc). Having the guts to develop a relationship and gain the trust of these homeless people is priceless in itself. Personally I hope nobody figures it out exactly.. (-:}
