When shooting Jpeg you generally want to set the camera up to get exactly what you want as post work isn't so easy....
If he likes it, ok. But desaturated would not generally be my choice.

It would not be my choice either. Thats the parts I don't understand. When he then adds saturation it makes the photos look overexposed. Wish I could talk him into shooting with saturation. He hates working on photos on the computer. He might be surprised how much work he is causing himself with the desaturation.

His camera is also the 7D. After doing a little research I really am even more confused than before. He has a really really nice camera and if he is shooting in jpeg that camera should be more than good enough to produce nice sharp colorful photos. But he now is saying it improves the color the way he does it. Just don't see it.

photography is subjective, remember that not everyone sees colour the same way.
if he prefers to do things that way, it could just be that that is how he sees the real world, or its his 'artistic intent'
