I KNOW!! This guy is so amazing!

All I know is that he had someone poor water "in the freezing cold" to create the "texture".. ahh I'm so curious I can't stop thinking about it!

I think as a courtesy, if your going to post the guys photo's you should at least put a link to his site. It is Justin Grant Photography

That said, I agree with you. They are amazing shots and I too wish I knew how he created them. Check out his web site, he has some other amazing shots on there too.

Here's my guess for the first photo:

He had someone on a ladder pouring water out of a bucket and had the model punch the water stream while he took a picture. He then put a goldfish in a bowl and put it on a glass table and lit the gold fish the exact same way as he lit the model. He had a dark background for the goldfish shot. He took the picture of the goldfish and photoshopped it into the picture of the guy punching the water stream.

The reason why he put the goldfish on a glass table is because it's lit from underneath and camera right. He might have even put a black scrim above the bowl to block any light from bouncing off the ceiling back on to the top of the goldfish.

I saw a write up on the second shot somewhere before but can't seem to find it. It was definitely two shots if I remember correctly.

My best guess:

1st shot, composite of 4 images.
*the boxer (note his hand is not "in" the water)
*the water stream (probably from a faucet/hose)
*spray of water. perhaps 2 versions 1 for "backsplash" (probably tossed from a glass or similar)
*goldfish (could have been tossed w/ water, but not likely)

2nd shot, composite of at least 2 images:
*the water...many ways of doing this, none simple. Simplest idea I can conceive would be to have someone completely in black spin and stand up while slinging water from a bucket. I say a bucket because the water starts out heavy low and runs out at the top.
*the model
*background was probably a 3rd image

Plenty of photoshop work in both...

I'd hazard a guess that the water in #2 is probably done along these lines, with the cunning use of custom brushes.

Lot's of composite work, but so obviously very worth the time. Just goes to show what a great imagination can result in.

I doubt it... I don't think it would ever look realistic enough.
But it could be done with a linear "throw" and then a bunch of copies, warping, etc etc...
Actually, looking at the bottom "sweep" it looks like a single curved throw which was then scaled, inverted, warped repeatedly... (botom sweep and middle sweep look almost identical)

Knowing where to look can be valuable. It's great sometimes to be a very observant person.
Here's a clue as to how he did the one with the model.

Artistic shoots - Justin Grant Photography

If you read his About section it'll even tell you that he's apparently a master at PP. This is a composite shot,...just a very well thought out shot before it was done.
