You are better off with a longer exposure and low power flash burst in a near black environment. This ensures the subject is completely frozen in its motion. High speed sync will cause blurring of the subject because of the multiple flashes involved.

Multi color flying paint. Take several colors of paint and capture them in motion before they mix while they are suspended in the air. You either need to shoot 10fps or be outright lucky, and you will need the help of a few friends. The thicker the paint the longer the hang time.
