Is there a major difference in shooting in b&w or converting the image to B&W with PS?

yes..



1. you have very little control if its done in camera, you really want to be able to adjust each channel for a dramatic b/w.

2. if you shoot direct to b/w you throw away the colour.. which is silly. because if you shoot colour you can always go to b/w later, but you cant go from b/w back to colour.

3. in camera is more likley to be greyscale by simple desaturation. which isnt really true black and white.

Shoot in color RAW, then you have all control.
