I understand that this was not done via cgi, but rather using some sort of trick... Can anyone enlighten?

In this case it's easy: they shot a series with the sun at the highest position, then shot it again (sans Luke) with the sun lower (you can see the arc of it). Then they composited the lower sun onto the higher-sun scene.

It's the same with most snowboarding/skateboarding photos, where the boarder is seen doing a trick in several steps on a single image.
