I found the shot I want, but haven't figured how to get there yet. Just north of the city on I-5, you can get the skyline with the lights reflecting off of the sound. Great shot during the day also, because you can get airplanes taking off and landing in the sound with the skyline in the background.
As a truck driver, it's hard for me to just get off the interstate and explore. But by car, should be pretty easy. Maybe someone knows the area I'm talking about, or comes up with a better suggestion.

Kerry Park on Queen Anne hill offers some good night shots of the Seattle skyline. Also check out Gasworks Park. I haven't been to GW park at night though. Both of these parks are north of downtown Seattle.
Two other options are in West Seattle across Elliott Bay. Along Harbor Ave SW you can find Jack Block Park as well as a few other good locations. Admiral Way gets you to a higher elevation and there is a lookout point you can get some decent shots from. Also check out the Japanese Gardens and the Seattle Arboretum for some decent nature shots. There is a pair of Bald Eagles that hang out on the eastern part of the Arboretum, North of 520, not too far from Husky Stadium. I often see them as I'm crossing the bridge on my way to Seattle. Pikes Place Market is also good. The Ballard Lockes can be fun as well. If you want to venture to the eastside (my neck of the woods), in Bellevue, off I405 near downtown Bellevue is a large railroad trestle. I have yet to get a good shot from there but I know good shots are possible. About 30 miles east off I90 you can visit Snoqualmie Falls. They have flood lights illuminating the falls at night so you can visit day or night. Hope this helps.

I'm not sure about at night, but during the day, Pikes Place Market is great. The colors and textures are fantastic. As well as the assorted street performers and people just generally hanging out. Taking the ferry across to Bainbridge Island gives you a pretty good view of the city.
