Just ask yourself why the guys who did last year (and the years before) are not queuing up for it this prime job?

Yeah to learn how not to do a job and who not to work for.
It is not a minimum wage job. It is £10 per set. That may be minimum wage in India but not in the UK or the US.

A portfolio of what exactly?
Exterior shots of restaurants and hotels which you can get anytime and rushed interior shots probably taken with on camera flash because you have absolutely no time to set up properly.
