What about cropping? If I were going to give them the pictures on CD, would I crop any of them or just leave them be until its time to order prints?

If you don't know what they will want to buy there should be no reason to do crops in advance of an order.

Even if there may be unsightly objects in the picture. There's one that was taken beside a house and it looks good cropped 8x10, but the full 4x6 shows part of the house. I was just thinking since they may use the digital images online, would that come back on me as a photographer if someone else saw it?

re-crop it to a 4x6 to eliminate the bad part, and save the original for further cropping if necessary in the future
All the more reason why you have to look beyond the subject when composing the shot

No offense but why did you agree to do a paid shoot with the admitted knowledge that you had no idea how you were going to get the resulting photos to the clients? This all should have been figured out and spelled out in a contract beforehand.
