Couple of thoughts:
Skip the 18-105 and get the D7000 body only or as a kit with the 16-85 VR.

If youre going to get a 70-300, make SURE it's the VR version. THe non-VR isnt much good.

There is a vertical grip (MB-D11), but do you really need it? Youre not using one now (it seems), so I dont know if you need the added expense

SB-600 and 50/1.8 are both excellent choices. Dont know if you'll need the speedlight right away, but with the D7000 it can be used off-camera remotely out of the box. This is also assuming you can find one.

Do you NEED new memory cards? Or UV filters? I dont use UV filters at all, but that's just me: for what you're saying you'll be doing, they dont seem to be a good way to spend your money

Tripod: Do yourself a favour, wait, and get a GOOD one.

Essentially the ideal kit, IMO, is some sort of ultra-wide, a wide-telephoto walkaround, a telephoto and a fast prime. The 16-85/50/70-300 fits that, though you're not getting the UWA (that one I leave to you).

All around lens 18-200mm AF-S DX VR Lens is indispensable. After that, you only need a macro and maybe a telephoto if you do wildlife.

With VR you don’t necessarily always need a tripod either.
