Default Files on Memory Card

This is my first post and I have a million questions, but this one is bugging me big time.

I'm using a Canon 1100d (T3) which i bough about a month ago, it's my first DSLR and i'm really enjoying it, certainly a step up from my old powershot.

When I first downloaded my photos there were many folders on my memory card, roughly divided into days, which was the same as my powershot.

Lately I've noticed that all my photos are in only one folder.

It's a real pain sorthing through them like that, especially if i've taken hundreds of photos.

Is there a setting i've possibly changed, or do I need to format the card?

See pages 156-157 of the manual. Pages 158-159 might be of interest, too. It's a bit lengthy to try to type in here.
