I have a Canon 40D with a fixed 18--200mm lens. I have been shooting in full auto and Aperture Priority but now want to try full manual mode, but I cannot see how to make the switch. I have changed the switch from Auto to Manual on the lens and also on the Mode Dial but Auto still shows in my window along with Shutter speed/Aperture. I would be most grateful for any help.

Two things.
The auto switch on the lens is for focus only. When in manual (M) "Auto" does not show up in the top LCD or viewfinder it is replaced by the ISO. (I own a Canon 40D)

In M mode, the main thing you want to start paying attention to is the "needle" on the meter in your viewfinder. In the automodes, the camera's auto-exposure system has automatically changed the exposure settings for you, based on the meter reading, so that the needle sits at "0", but in Manaul mode, the camera is now waiting for you to do all the setting, so the needle in the meter is your guide to what kind of exposure you're getting before you take the shot.
After you take the shot, your histogram is your guide.
