Can someone tell me what the EOS utility is that come with the camera.

It's software that lets you do things like tethered shooting (i.e., control your camera from your computer when your computer's hooked up via a USB cable), and control some settings on your camera (i.e., owner name, copyright date in the EXIF, setting up your customized menu with the functions you want to use the most, etc.) edit your Picture Styles, communicate with a Canon wi-fi grip, download images, etc.

It's sort of the swiss army knife of software to let your computer talk to your Canon camera, vs. other packages that talk to the pictures you have on your camera.
