A few things to understand and consider:
1) what you are looking for has little to do with the particular brand or model of a camera. Any SLR from any of the major named companies will provide you with what you are looking for...from entry level right up to pro level cameras. 2) "richness" (I'll assume you are talking about contrast, brilliance, and saturation) can be adjusted in the camera's custom settings, and certainly can mostly be done, and more often done in post processing. 3) different lenses yield color saturation and contrast differently. That said, your choice of lenses will impact that With $3000 to spend you will have a broad choice of cameras and lenses to consider...so, the choice is yours

Agreed with Vinnie. Go to a camera store, see and hold different makes and models and see what feels best.

I do agree with both the above posts. The cameras you can check out are Canon 7D or Canon 60d with a portrait lens after all glass do make difference.
