If I understand you, you want the Camera settings, not the setting of the subject. For me that would be 1/250 sec, f11 at iso 100 on my 50D handheld. For the way I shoot I use that ninety percent of the time.

I just keep mine on the Standard picture style.

Standard.
I always shoot RAW and may apply a picture style when PPing and then tweak it a little.

Most often aperture priority around f5 to f8, ISO 200 on my T1i, but those are just starting numbers. Any of them can and will be changed when the situation warrants it. Those settings just keep me ready if a fleeting opportunity comes up where I don't have time to fiddle with anything. I too shoot RAW so I can make necessary adjustments before I convert.

I shoot RAW, so when I go into post, it has nothing applied to it. But for in-camera previewing, I use a custom setting. I turn contrast and sharpness all the way down and keep saturation and color tune normally. I have read that this gives you a better idea of what the RAW image will look like when viewing the preview in the camera.
