if anyone tries to bash you for getting L glass with a crop sensor body, THEY are the one that deserves to be bashed because they have no idea what they are talking about. if it were me, i would without a doubt upgrade my lenses before getting a new body. i would go for either the 24-70 f2.8 or the 24-105 f4 IS... both with be light years better than the 18-55 kit lens. if you have money to get more, the 10-22 ultrawide is fantastic for really getting the most out of the smaller cropped sensors. yeah it's EF-S so it wouldn't fit on a full frame, but really, how soon do you honestly think you are going to need a full frame camera? plus, it's a very durable, well built lens that holds its value well, so assuming you treat it well you could most likely sell it and get back nearly everything you spent on it when you do upgrade to FF. you could also check out any of the 70-200 L lenses if you are more interested in improving the telephoto end of your glass... I've heard really good things about all of them, and there is such a wide range of them that they can work with many budgets.
the 7D is a great camera, but it's really geared towards sports and action photography with the advanced AF system and the crazy burst rate... if you do upgrade you body you could probably save yourself some serious cash if you went for either a 50D, a 60D, or a T2i (550D), and any of those will be an enormous improvement over your current XT, because the 50D which is the oldest of those is 3 generations newer than the XT, plus both the 50D and the 60D are a class up from the Rebel line.
