I don't have a G11, but I do have a G9, and I ended up buying a lensmate for it, which I used a few times, but which I never really think I used enough to justify it--it was great for being able to use an infrared filter, though. Unfortunately, it's a more complex option on the G11 because of the wider lens.
I never went for any of the teleconverters, since my experience with them on SLR lenses always included loss of image quality. As for a flash, I already had Canon speedlites and an ST-E2; the full-sized flashes were just to big and topheavy on the camera, but the ST-E2 is a perfect fit/weight balance, so I opted to go off-camera, Strobist-style. This is probably too expensive if you don't already own the gear. But there are lower-cost alternatives. While it may look like the smaller Canon flash like a 270EX is a good idea, I'd actually recommend going with a Lumopro LP120 and cheap radio triggers. My RF602s also work great with my G9. You'll spend maybe $50 more than you would on a 270EX, but have a lot more lighting capability, if you turn out to be a Strobist geek. But if you just want to improve on the built-in flash and you don't want to learn lighting, then a 270EX might do you.Two other accessories you may want to consider: a cable release (or radio shutter remote), and a small travel tripod like a gorillapod or ultrapod.
