Typically, some of the best waterfall/flowing stream shots I have seen were taken at a shutterspeed of 1/2 to 2 seconds. The end result depends on the rate of flow of the water and the background (dark river bed, rocks etc.). In the fountain shots, the water was under pressure and flowing quite fast. It was also shot against a more solid tone background. The result was much softer overall than with a waterfall or flowing stream shot. I feel you learned a lot from your tests and that is the important thing. Whether one person likes one shot over another should not matter as their reasons may differ greatly from what you were feeling/thinking/visualizing when you took the photo. I look forward to seeing your waterfall shots. Take lots of exposures at different shutter speeds.
