Sorry for the excess of images ... I couldn't decide which one sucked the hardest ... I really thought I would do better ...

I tried doing the smoke with incense sticks last night... it didn't work out for me I don't think the smoke was thick enough to stand out from the background =\

What lighting were you using? If the smoke is far enough away from the background and you are in a dark room, it should be easy to illuminate it even if the smoke isn't that thick.

When I played with this earlier in the year, I found that a handheld flashlight worked well.

I was using a 500W halogen light (like a work light).. hmm when I tried the smoke wasn't that far away from the background - how far do you recommend?

As far as you can.

In most cases, you don't want the background visible at all. Ideally the background should be dark and non-reflective so none of the light bounces back from it. That can be helped by distance - less light will reach it in the first place. It is also helped by the fact that, focusing on nearby smoke, the background should be very out of focus as well.

Perhaps your light is too bright and thus lighting up too much of the room?
