Default assignment:monochrome

I took this the other day up at Valley Forge. When I converted it to greyscale using Irfanview, the exif data stayed intact. Being as the tree stump that I had the camera sitting on was not exactly straight, I attempted to rotate and crop the photo. However, each time I cropped with whatever program I loose the exif data. Any ideas as to why this is happening or how I can crop and not loose the data? Or does this always happen when cropping?

I've straightened and cropped many times using Picasa all while keeping the EXIF data intact.

i took this yesterday, conveniently fits the theme. i never usually photograph in black&white but i quite liked the effect of it with the dappled light.

edit: not for assignment.
